I've come across Session Initiation Protocol and Media Gateway protocol for VoIP commercial phone sets. How these protocols help someone enjoy a better quality of VoIP services and how different these are from the standard protocol? Do they enhance my experience in the first place? May someone explain these protocols in detail. Thanks!

SIP protocol is protocol used on application layer. You have different protocols on that layer: HTTP, DNS, FTP etc. and SIP is one of them and is used for signaling and controlling multimedia communication sessions. There are a lot of different articles about SIP protocol, I suggest reading them online as SIP has many elements from HTTP and SMTP protocols.
